These African meatballs are made with garlic, parsley, onions and my all-time favorite spice, white pepper! They are simmered in an insanely flavorful tomato sauce. In my home, we eat this with pasta or rice. So good!

Ingredients

  • 2 pounds ground beef (about 1 kg)
  • 1 medium onion – chopped
  • 8 cloves garlic – minced
  • 1 large egg
  • 3 sprigs parsley – chopped
  • 1/4 teaspoon white pepper
  • 4 seasoning cubes (Maggi – about 4g per cube) substitute with bouillon powder
  • 1/2 cup breadcrumbs
  • 3/4 cup oil
  • 3-4 large tomatoes – chopped
  • 16 ounces tomato sauce (about 450g) I used 2 8oz cans
  • 3 leaves basil – chopped
  • 1 teaspoon salt

Instructions

  • In a large mixing bowl, combine the ground beef, breadcrumbs, egg, fresh parsley, half of the minced garlic, half of the chopped onion, salt, white pepper, and the seasoning cubes. Use your hands to gently mix all the ingredients until they are just combined. Be careful not to overmix, as this can lead to tough meatballs.
  • To ensure uniform size for even cooking, use an ice cream scoop to portion out the meat mixture. Then, gently roll each portion between your palms to form smooth, compact balls. Place the formed meatballs on a tray and continue the process until all the meat mixture has been used.
  • Heat the oil in a large pan over high heat for approximately 5 minutes until shimmering. Reduce the heat to medium, then carefully place the meatballs into the hot oil. Avoid overcrowding the pan; cook them in batches if necessary to ensure proper browning and even cooking.
  • Allow one side of the meatballs to cook undisturbed for 3-4 minutes until nicely browned. Then, flip them gently to the other side and cook for another 3 minutes. Once browned on all sides, remove the meatballs from the oil and set them aside. Repeat this process with any remaining meatballs.
  • Using the same pan and residual oil (drain some if excessive), add the remaining chopped onions and minced garlic. Sauté over medium heat until fragrant and softened, typically about 2-3 minutes. Next, add the chopped fresh tomatoes and cook, stirring occasionally, until the tomatoes have softened and slightly reduced in size, which should take about 5 minutes.
  • Pour in the tomato sauce and continue to cook for another 10 minutes, stirring periodically, until the sauce develops a richer flavor and the raw taste of tomatoes disappears. At this stage, check the consistency of the sauce. If it’s too thick for your preference, gradually add about half to one cup of water to reach your desired consistency.
  • Stir in the remaining seasoning cubes and a pinch of salt to taste, mixing well to dissolve them into the sauce. Gently add the cooked meatballs back into the pan, ensuring they are thoroughly coated with the delicious tomato sauce. Let the mixture simmer over low heat for about 10 minutes, allowing the flavors to meld and the meatballs to absorb the sauce.
