Ingredients

  • 2 1/2 cups basmati rice substitute with parboiled rice
  • 1 1/2 cups shrimp – peeled and deveined
  • 1 pound chicken breast – cut into 1 inch slices (about 1/2 kg)
  • 5 garlic cloves – peeled
  • 1 inch ginger root – peeled
  • 1 sprig parsley
  • 1/2 teaspoon ground white pepper
  • 2 bay leaves
  • 1/2 teaspoon curry powder
  • 3 small cubes Maggi (about 4g per cube) substitute with 3 teaspoons of chicken bouillon powder
  • 1 cup oil – I used canola
  • 1 cup chopped onion (from half a large onion or 1 medium onion)
  • 1 stem green onion – chopped
  • 2 medium carrots – chopped
  • 1 handful green beans – chopped
  • 3/4 cup sweet corn I used frozen
  • 3/4 cup sweet peas I used frozen
  • Salt

Instructions

  1. Blend together garlic, ginger and parsley with a little water to form a smooth paste.
  2. Season the chicken and shrimp. Sprinkle a pinch of salt over the shrimp and 1/4 teaspoon of salt over the chicken. Season both the shrimp and chicken with 1/4 teaspoon of white pepper. Then, divide half a teaspoon of the garlic-ginger-parsley blend evenly over the chicken and the shrimp. Mix thoroughly to ensure all pieces are well coated. Set aside to marinate slightly.
  3. Wash the rice about 4-5 times until the water runs clear, indicating that excess starch has been removed. Place the washed rice in a pot. Add in 2 cups of water, one teaspoon of salt, the bay leaves, curry powder, and Maggi cubes (or chicken bouillon powder). Stir everything well to combine, then cover the pot and bring to a boil over high heat. Once boiling, reduce the heat to medium and allow the rice to cook until all the liquid is absorbed. Add 1 more cup of water and continue to cook until this liquid is also fully absorbed. Cover and let it rest for about 5 minutes. Finally, fluff the cooked rice with a fork and spread it out on a large tray to cool completely. (Refer to Note 1 for optimal rice preparation).
  4. Pour the oil into a large pot or wok and heat it for about 3 minutes over medium-high heat. Add the seasoned shrimp and cook for approximately four minutes, flipping halfway through to ensure even cooking. Once done, remove the shrimp from the pot and set aside.
  5. In the same oil, add the seasoned chicken pieces. Cook for about four minutes, similar to the shrimp, flipping halfway through. Once the chicken is cooked through and lightly golden, remove it from the pot and set aside with the shrimp.
  6. Add the chopped regular onions and green onions to the remaining oil. Sauté for about 3 minutes until the onions become translucent and fragrant. Then, add the remaining garlic-ginger-parsley blend and stir well. Allow this aromatic mixture to cook for another 2 minutes, releasing its full fragrance.
  7. Introduce the chopped carrots and green beans to the pot, stirring well to combine with the onion mixture. Cook for a few minutes until slightly tender-crisp. Next, add the sweet corn and peas (if using frozen, no need to thaw) and stir again.
  8. Return the cooked chicken and shrimp to the pot with the vegetables and aromatics. Stir everything together gently. Finally, add the cooled, fluffed rice to the pot and stir-fry until all the ingredients are thoroughly incorporated and evenly distributed.
  9. Allow all the ingredients to sizzle together for about 2 minutes, ensuring the flavors meld without overcooking the vibrant vegetables. Then, turn off the heat and serve immediately! Enjoy your incredibly flavorful African Chicken and Shrimp Fried Rice!

Notes

1. For the best fried rice texture, consider boiling the rice a day before you plan to fry it. Day-old rice works exceptionally well because it’s cold and drier, which prevents it from becoming mushy and breaking apart easily during stir-frying.
2. If you enjoy a spicy kick in your fried rice, feel free to add some hot pepper (such as habanero, Scotch bonnet, or your preferred chili) when blending the garlic, ginger, and parsley paste. Adjust the amount to your heat preference.
3. For a fried rice with a whiter appearance, rather than the slight yellow hue imparted by curry powder, you can simply omit the curry powder from the rice cooking step. The dish will still be incredibly flavorful!
