Sprinkle a quarter teaspoon of salt over them, add a generous tablespoon of the freshly prepared spice blend from the previous step, and if you’re using it, include a quarter teaspoon of white pepper for an extra layer of flavor. Gently toss and mix well, ensuring that each mushroom slice is thoroughly coated with the aromatic seasoning. After 5 minutes, carefully drain the cabbage using a colander. To halt the cooking process and maintain its crispness, immediately rinse the strained cabbage under cold running water.
