Ingredients

  • 2-3 medium pears, ripe but firm (such as Bosc, Anjou, or Bartlett)
  • 4 medium eggs, at room temperature
  • 125 gr (approx. 9 tbsp) granulated sugar
  • 4 oz (approx. 113g) unsalted butter, softened to room temperature
  • 1 tsp vanilla extract
  • 50 ml whole milk, at room temperature
  • 2 cups almond flour (finely ground almonds)
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder, fresh and active
  • Pinch of salt
  • 2 tbsp almond flakes, for topping
  • Zest of 1 lemon (about 1 teaspoon)
  • Icing sugar, for garnish (optional)
  • Extra butter, to grease the cake pan

Instructions

  1. Preheat Oven & Prep Pan: Preheat your oven to 375°F (190°C). Grease an 8-inch or 10-inch cake pan (a springform pan is ideal for easy removal) with butter. Line the bottom with a round of parchment paper. Set aside.
  2. Cream Butter & Sugar: In a large mixing bowl, combine the softened butter, lemon zest, vanilla extract, and granulated sugar. Beat with an electric mixer (or whisk vigorously by hand) until the mixture is pale in color, light, and notably foamy, incorporating air.
  3. Add Eggs: Add the eggs, one at a time, beating well after each addition until each egg is fully incorporated and the batter is smooth and emulsified.
  4. Fold in Dry Ingredients: Pour in the whole milk. Then, gently fold in the almond flour, all-purpose flour, baking powder, and salt. Mix until just combined, taking care not to overmix to ensure a tender cake crumb.
  5. Fill Pan: Spoon the prepared cake batter evenly into the greased and lined cake pan. Use a spatula to gently spread and smooth the top surface of the batter.
  6. Prepare Pears: Peel the pears, cut them in half lengthwise, and carefully remove the core with a small spoon. Place the pear halves cut-side down on a cutting board and slice them thinly lengthwise, aiming for uniform thickness.
  7. Top with Pears & Almonds: Artfully arrange the thin pear slices on top of the cake batter in a decorative pattern (e.g., overlapping in circles). Generously sprinkle the almond flakes evenly over the pears and the remaining batter surface.
  8. Bake: Place the cake in the preheated oven and bake for approximately 35 minutes. To check for doneness, insert a toothpick into the center of the cake; it should come out clean when the cake is ready.
  9. Cool: Remove the cake from the oven and place it on a wire rack to cool completely in the pan. This allows the cake’s structure to set. Once thoroughly cooled, carefully remove it from the pan and transfer it to a serving plate.
  10. Garnish & Serve: Just before serving, generously dust the cooled cake with icing sugar using a fine-mesh sieve. You can also add a few more almond flakes for an extra garnish if desired. Slice and serve this delightful Pear Almond Cake.
