For weeks now, I’ve eagerly anticipated dedicating my Monday mornings to sharing a heartfelt update with all of you. Yet, the allure of deep sleep often proves too strong, pulling me into the late hours of the morning. Waking up later than planned means my day is already brimming with tasks, leaving little room to sit down and pen my thoughts. Sometimes, sleep can feel like a formidable adversary to productivity and creative pursuits.

This particular morning was no exception to my usual Monday routine, or lack thereof. I found myself waking much later than I intended. However, I made a firm resolve in my heart: to sit down, type out an update, and connect with you, come what may. These Monday mornings are designated for what I call “pen speaking” posts – a commitment to sharing reflections and updates, a tradition I’m dedicated to establishing, even if it has been challenging to maintain recently amidst the whirlwind of our new life.

A Fresh Start: Settling into the California Lifestyle

So, here we are, gradually settling into our new life in beautiful California. The transition has brought with it a kaleidoscope of changes, painting our days with vibrant, new hues. Life right now is truly an exploration of countless different shades, each adding a unique texture to our family’s journey. From the bustling streets to the serene landscapes, we are slowly but surely finding our rhythm and embracing the distinct California lifestyle.

Finding Our Community: A Surprising Megachurch Experience

One of the most delightful and significant changes we’re absolutely loving is the discovery of our new church! It’s truly remarkable. We’ve been genuinely touched by the warmth and openness of the congregation, effortlessly forming connections with several Jesus-loving families almost every Sunday since we started attending. Given that it’s a rather large institution, often labeled a “megachurch,” it’s incredibly encouraging to witness how much effort people put into connecting and building genuine relationships within such a vast community. This welcoming atmosphere has made our relocation so much smoother, providing a strong sense of belonging right from the start.

I must admit, I initially harbored reservations about joining a megachurch. My primary concern was always the potential for feeling lost in the crowd, for lacking that intimate sense of belonging and the close-knit relationships that define a true church family. However, this particular community has, thus far, proven to be wonderfully different. We feel seen, welcomed, and part of something special. The intentionality of its members in reaching out and fostering connections has truly transformed our perspective, and for that, we are incredibly thankful to have found our spiritual home here in California!

Nurturing Connections: Homeschooling in California

Beyond our spiritual community, we’ve also had the immense pleasure of meeting several other homeschooling families in the area. This has been a wonderful blessing, offering a sense of camaraderie, shared experience, and invaluable support. Finding like-minded individuals who understand the unique journey of homeschooling is crucial, and we’re so grateful to be building these new friendships! The prospect of connecting with others who share similar values and lifestyles is truly exciting.

In fact, I’m thrilled to share that I’ll be enjoying a much-anticipated moms’ night out with other homeschool moms tomorrow. These opportunities for connection, shared laughter, and mutual encouragement are vital for navigating the joys and challenges of homeschooling, and they truly help us feel more rooted and integrated into our new surroundings.

Embracing the California Climate: Saying Goodbye to Winter Woes

Another aspect of California living that we’re wholeheartedly embracing is the complete absence of that looming dread of an impending winter and the seemingly endless inches of snow. While perhaps not truly “unending,” that’s certainly how the constant snowfall in Minnesota often felt! I never looked forward to winter; it always felt like a dark, inescapable period of life, demanding layers upon layers of clothing and careful navigation.

Our winter coping mechanisms, it seems, were never quite robust enough to make navigating snow-laden roads and brisk walks an enjoyable experience. Here in California, that pervasive fear and seasonal melancholia have been replaced with an invigorating appreciation for milder temperatures, abundant sunshine, and verdant landscapes year-round. The relief of not having to prepare for extreme cold and continuous snowfall is immense, allowing us to enjoy the outdoors more freely and fostering a brighter, more optimistic outlook on daily life. This significant change in climate has undeniably contributed to our overall happiness and sense of well-being, making outdoor activities a year-round possibility.

A Quirky Challenge: Learning to Coexist with California Wildlife

Now, for one peculiar aspect of California that I haven’t quite warmed up to yet: the ubiquitous presence of lizards! It’s quite strange how much these little reptiles unnerve me, especially considering I grew up seeing large lizards freely strutting around buildings in my childhood home. Yet, after spending a significant period in Minnesota where such creatures were notably absent (save for a pet lizard at a family friend’s house), I had entirely forgotten what it was like to regularly share my pathways and outdoor spaces with reptiles.

It’s a genuine challenge, and I find myself needing to relearn how to live harmoniously with, and accept, these creatures that God has made. While I intellectually acknowledge their place in the ecosystem and the beauty of nature, the initial instinct is certainly one of startled aversion and a quick detour! Adapting to the local wildlife, particularly these swift, scaly residents, is undoubtedly an ongoing, and sometimes comical, part of our California adventure!

There’s an undeniable truth in the saying that cooking makes a house a home, and I’ve certainly been embracing that philosophy with gusto here in California. Filling our new kitchen with the comforting aromas of delicious, homemade meals has been a key part of settling in and creating a sense of belonging for our family. Food, after all, is a universal language of love and familiarity, especially when navigating a new environment. This desire extends to other hearty staples like yam porridge and, of course, the beloved plantain porridge. It’s important to clarify that West African “porridge” meals differ significantly from the oatmeal or grain-based porridges found in other parts of the world. Our versions typically feature a starchy carbohydrate, such as plantains or yams, cooked savory in one pot with various spices, proteins, and often palm oil.

These aren’t mushy, uniform concoctions either. As you can see from the image, my plantain porridge proudly retains distinct pieces of plantain, offering a wonderful, slightly chewy texture that is incredibly satisfying and adds to the dish’s robustness. It’s a hearty, flavorful, and deeply comforting meal that speaks directly to my roots, brings warmth to our new home, and serves as a delicious reminder of traditional West African cuisine.

Beyond the delightful porridges, I’ve also been making a lot of omelettes lately, transforming a simple breakfast item into a truly fulfilling and versatile meal that works any time of day. The savory richness of the fluffy omelette perfectly complements the inherent sweetness and tender, caramelized texture of the plantains, creating a beautifully balanced and incredibly satisfying plate.

Interestingly, I sourced these unique African sweet potatoes from an Asian store here in California, a testament to the diverse culinary landscape we’re now exploring. They are quite distinct from the typical American sweet potatoes often found in mainstream supermarkets. The ones I purchased have a vibrant purple skin, whereas the varieties common back home usually feature a yellow exterior. Despite this striking visual difference, their taste is, remarkably, EXACTLY THE SAME – sweet, earthy, and utterly delicious, evoking fond memories of home. They are often labeled as “Thai sweet potatoes” here, proving that culinary treasures and familiar flavors can indeed be found in unexpected places. I’ve also developed a serious appreciation for stewed pinto beans since moving to California! I honestly believe I’ve consumed more pinto beans in my relatively short time here than in my entire life in the U.S. previously. Can we just take a moment to give a standing ovation to one-pot, 30-minute pasta meals? These culinary heroes have, in my humble opinion, been saving lives (and weeknights) for centuries! They offer an unparalleled combination of speed, simplicity, and deliciousness, making them an indispensable part of any busy household’s repertoire. Our latest success story features macaroni, which I simply boiled to al dente perfection and then sautéed in a rich, yet straightforward, tomato sauce, generously enhanced with canned sardines packed in oil. I can tell you, my kids were absolutely delighted – their plates were cleared in record time, which is always the most resounding endorsement a home cook can receive!

This particular dish holds a very special place in my heart, deeply rooted in my childhood and cultural upbringing – a true taste of home.

I savored this combination countless times throughout my childhood, growing up with its unique flavors, and my love for it remains as strong as ever. Amidst all these new experiences, discoveries, and culinary adventures, there’s another profoundly special and transformative chapter unfolding in our lives: someone very pregnant is writing this post!
