  • 3 tablespoons ground garlic and ginger (approx. 6 cloves garlic, 1 inch ginger)

  • 1 sprig parsley
  • 1 large carrot – chopped
  • 15 green beans – chopped
  • 1/3 green pepper – chopped
  • 4 pounds chicken (whole or part of choice) (about 2 kg)
  • 1 cup of canola oil
  • 2 stems of green onions – chopped
  • 3 small stock cubes (3.5g per cube)
  • Salt
  • 1 teaspoon white pepper

Instructions

  1. Cut chicken into desired pieces, rinse thoroughly, then place in a pot. Add half a cup of water, 2 teaspoons of the ginger, garlic and herb blend, salt to taste, and 1/4 teaspoon white pepper. Cook on medium heat for 20 minutes, ensuring the water doesn’t completely dry out. Replenish with a little water as needed. Once cooked, remove the chicken from the stock and place it on a greased oven tray. Broil or grill in the oven for about 10 minutes until lightly browned.
  2. Peel the potatoes, rinse them thoroughly, and place them in a pot. Add water until it covers about halfway up the potatoes. Boil until they are tender, which should take approximately 20 minutes. Once done, place the potatoes on a greased oven tray and grill or broil them in a preheated oven for 10 minutes to develop a slight crispness.
