  • 14 oz dry Rigatoni pasta (or penne, approx. 400 grams)
  • 1¼ cups heavy cream (or double cream, approx. 300 ml)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon butter (15g, ½ oz.)
  • 1 large onion, finely chopped (around 180g or 6 oz)
  • 3 garlic cloves, crushed (or use garlic paste)
  • 1 teaspoon sugar
  • 200 grams fresh mushrooms, sliced (any type you like, approx. 8 oz.)
  • 4 tablespoons whisky or bourbon
  • ⅔ cup parmesan cheese, grated (150 ml, plus extra for serving)
  • 2-3 tablespoons fresh parsley, chopped (plus extra for garnish)

Instructions

  1. Massage both sides of the steak with 1 tablespoon of olive oil, then sprinkle generously with salt and black pepper to your liking.
  2. Heat a large skillet or frying pan on medium-high heat until hot.
  3. Place the steak in the hot pan and cook on both sides to your desired doneness (approx. 4 mins per side for medium-rare, 5 mins for medium, depending on thickness).
  4. Remove the steak from the pan, transfer to a plate, and cover loosely with foil to rest.
  5. In a large pot of boiling, well-salted water, cook the pasta according to package directions until al dente.
  6. Important: Before draining, remember to save at least ½ cup of the starchy pasta water. Drain the pasta in a colander.

Creamy Mushroom Sauce

  1. While the pasta cooks, begin preparing the creamy mushroom sauce.
  2. In a medium mixing bowl, combine the heavy cream, ½ teaspoon salt, Dijon mustard, ¼ teaspoon black pepper, and balsamic vinegar. Stir and set aside.
  3. In the same large frying pan (from the steak), heat the remaining 1 tablespoon of olive oil and the butter over medium heat. Once melted, reduce heat to medium-low, add the chopped onions, and fry for about 4 minutes until tender.
  4. Stir in the crushed garlic and sugar, and sauté for another 2 minutes until the onions are lightly browned and caramelized.
  5. Add the sliced mushrooms and fry over medium-high heat until golden brown, about 4-5 minutes.
  6. Raise the heat slightly and add the whisky. Simmer until reduced to nearly a glaze (about 2 minutes), scraping up any browned bits.
  7. Stir in the prepared creamy pasta sauce mixture. Simmer for another two minutes to heat through and meld flavors.
  8. Remove the pan from the heat. Stir in the grated Parmesan cheese (reserving some for serving) and chopped fresh parsley until combined.

Steak and Mushroom Pasta Assembly

  1. Add the drained, cooked pasta to the sauce in the pan, tossing gently to combine.
  2. Gradually add the reserved starchy pasta water until the sauce reaches your desired consistency (typically the whole ½ cup).
  3. Return the pan to medium heat and cook for 3-5 minutes, stirring, to allow flavors to combine.
  4. Slice the rested steak against the grain into thin strips.
  5. Serve the pasta immediately in bowls, topping each portion with the sliced steak.
  6. Garnish with an extra touch of freshly chopped parsley, an additional sprinkle of Parmesan cheese, and lots of freshly ground black pepper. Enjoy!

  • Always set aside pasta water! If your sauce becomes too thick, a splash of this starchy water will thin it down and help it cling to the pasta.
