To ignite this flavorful exploration, I shared a personal favorite: bread paired with the iconic Accra Beans, also known as Akara in many West African cultures. This popular street food is a staple in several regions of Cameroon, cherished for its simplicity and hearty appeal. Traditionally, Akara is a deep-fried bean fritter, often made from black-eyed peas, seasoned and fried until golden brown and crispy on the outside, soft and fluffy on the inside.
However, I decided to give this beloved classic a refreshing and wholesome twist. My reimagined version, which I affectionately call “Accra Beans Redefined,” incorporates fresh, crisp lettuce, thinly sliced red onion, and ripe, juicy tomatoes. These additions elevate the dish, transforming it into a vibrant, textural, and incredibly flavorful experience. The cool crunch of the lettuce, the subtle bite of the onion, and the sweet acidity of the tomato perfectly complement the savory richness of the Akara. Here in Minnesota, nature puts on a truly spectacular display as autumn arrives. The leaves on the trees have undergone their glorious transformation, transitioning from vibrant greens to a breathtaking palette of fiery reds, warm oranges, and golden yellows. It is simply, truly, exquisitely beautiful. There’s a certain magic in the air during this season, a crispness that invigorates the senses and a visual feast that soothes the soul. The way the sunlight filters through the kaleidoscope of colors, casting long, dancing shadows, creates a serene and picturesque landscape that feels almost otherworldly.
I had the pleasure of capturing some of these stunning moments during a delightful trip to the playground with my girls. The Transformative Power of a “Done” List: Shifting Perspective
In the whirlwind of daily life, it’s incredibly easy to get caught up in what remains undone, to feel overwhelmed by an ever-growing “to-do” list. This constant focus on uncompleted tasks can be profoundly demoralizing, leading to feelings of inadequacy and even sadness. However, I stumbled upon a simple yet profoundly transformative concept that has quite literally changed my world: writing a “done” list instead of solely dwelling on the “to-do” list. This shift in perspective is a powerful antidote to the common pitfall of focusing predominantly on what hasn’t been accomplished rather than celebrating what has.
Just the act of consciously acknowledging what I’ve already achieved, no matter how small, provides an incredible boost to my morale and fuels my motivation to tackle more. I’ve come to realize that I actually accomplish a tremendous amount every single day. Yet, being a “more! more!! more!!!” kind of person, my inherent drive often prevents me from truly appreciating the progress I’ve made. When my focus remains fixed on the seemingly endless list of pending tasks, I inevitably feel inadequate and fall short of my own demanding expectations. For instance, right now, I could easily agonize over unedited pictures for upcoming posts or the pending appointments that need to be made. But I consciously choose a different path.
Instead, I choose to rejoice and find strength in the fact that today, I have already:
- Had a truly restful night’s sleep, which is foundational for everything else.
- Engaged in meaningful prayer and studied God’s Word, nourishing my spirit.
- Conducted intense homeschooling sessions with my children, fostering their growth and learning.
- Shared a valuable blog post on Facebook, connecting with my community.
- Called my beloved mom and dad – a simple act that reminds me of the precious bonds of family. I truly love those people!
- Enjoyed a nourishing meal. Ha, the simple joy of sustenance!
- AND, perhaps most significantly, I am right now in the process of writing this very blog post, which, by itself, is a HUGE achievement amidst a busy day.
This practice has taught me to celebrate the small victories, to recognize the continuous effort, and to cultivate a mindset of gratitude and accomplishment.
