While I’m a little behind on my video production schedule this week, meaning no new visual feast for you today, I couldn’t let the week pass without a heartfelt connection. So, instead of a video, I thought we’d just have a good old-fashioned chat, a space where we can truly connect. How are you all doing? Since I made the difficult but necessary decision to retire my “Here’s What’s Up” series, I’ve noticed a distinct void, a lack of those wonderfully random, anything-goes posts that used to pepper our blog. And truth be told, I’ve missed them dearly. After all, what is a blog without a dash of genuine personality, a sprinkle of life’s little quirks, and that unique personal touch that makes it truly yours?

So, let’s dive right into what’s been unfolding in my world, starting with a culinary triumph that filled me with immense pride. Last weekend, I embarked on a journey to create homemade croissants. Oh, what a blissful experience it turned out to be! The results were nothing short of spectacular – flaky, buttery, and utterly delicious. The satisfaction of biting into a croissant made from scratch, knowing the effort and love poured into each layer, is unparalleled. It truly made me feel incredibly proud of what I had accomplished in my kitchen.

My journey to making croissants wasn’t without its initial trepidation. I vividly remember the first time I ventured into researching how to make croissants. I stumbled upon a video by one of my absolute favorite culinary personalities, Laura Vitale, specifically this particular tutorial. As I watched, mesmerized yet increasingly daunted, I counted a staggering 49 steps involved in the process. My immediate, unshakeable resolution at that moment was clear: “I am never, ever going to make these.”

The sheer complexity and time commitment seemed almost absurd. Working on the same dough for three days? Rolling, folding, measuring with meticulous precision, and enduring countless hours of chilling in between? Yes, three days. That’s the dedicated time required to transform a simple mixture of flour, butter, and water into those iconic, crescent-shaped pastries. While the dough spends a significant portion of those days resting in the refrigerator, the concept of a three-day commitment to a single recipe felt monumental. I’m almost certain that upon learning the full procedure, I must have instinctively circled my hand around my head in that classic Nollywood actor fashion, exclaiming something akin to, “Tufiakwa!” (a Nigerian exclamation of strong disapproval or shock).

But then, something inside me stirred. It was that unyielding, insatiable “foodie” spirit – that innate drive God instilled within me that compels me to cook, to create, and to explore the vast world of flavors. In other exciting news, this upcoming weekend brings with it a delightful culinary challenge: I’m catering for a special event! This means my kitchen will be buzzing with activity, filled with the delicious aromas of two beloved dishes. I’ll be meticulously preparing large batches of Accra Banana fritters and my irresistible drop doughnuts. Both are absolute crowd-pleasers, known for their comforting flavors and delightful textures, and I can’t wait to share them with everyone at the event. And let me tell you, “tasting” can quickly evolve into “sampling” which then, quite effortlessly, becomes “eating a significant portion.” The temptation to indulge in the fruits of my labor is immense, and I foresee a potential battle with my waistline. So, a little prayer or positive thought for me would be much appreciated in advance. Ha! Wish me luck in resisting the deliciousness, or at least in finding a healthy balance!

My Latest Obsession: The Mighty Coconut

And speaking of exciting developments, I must share my latest source of immense joy: I bought five fresh coconuts from the grocery store two days ago! And let me tell you, I have been an incredibly happy person ever since. There’s something inherently uplifting about the humble coconut. I find myself habitually passing by them, picking them up, holding them, and giving them a gentle shake. The delightful sloshing sound of the coconut water dancing within its protective shell brings an inexplicable sense of cheer to my soul. Oh, coconut, how I adore thee!

The versatility of this tropical marvel is truly inspiring. With these beautiful, fresh coconuts, I envision a future filled with homemade goodness. My immediate plans involve crafting my own rich, creamy coconut milk – a staple for so many culinary creations, from curries to desserts.
