How to make the best easy coconut rice, step-by-step

Essential Ingredients for Fluffy Coconut Rice

The magic of this recipe lies in its simplicity and the quality of its few ingredients. Here’s what you’ll need to create your perfect batch of coconut rice:

  • Rice: We recommend using parboiled rice for its separate grains and forgiving nature, making it less likely to clump. However, you can also use jasmine rice or Basmati rice for a different texture and aroma. Remember to adjust the liquid ratio slightly if using different rice varieties, as some absorb more water than others.
  • Full-Fat Coconut Milk: This is the heart of the dish. Opt for good quality full-fat canned coconut milk for maximum creaminess and flavor. The richness it provides is unparalleled.
  • Water: Combined with coconut milk, water helps achieve the ideal liquid-to-rice ratio, ensuring perfectly cooked grains.
  • Salt: A crucial seasoning that enhances the natural sweetness and savory notes of the coconut milk. Don’t skip it!
  • Carrots (Chopped): Adds a touch of sweetness, vibrant color, and a healthy dose of vitamins.
  • Peas (Frozen, Thawed & Rinsed): Offers a pop of green, a subtle sweetness, and additional texture.

  3. Add water to the level of the coconut pieces in the blender.
  4. Blend on high until the mixture is creamy and smooth.

Step-by-Step Guide to Making Easy Coconut Rice

Creating this aromatic side dish is incredibly straightforward. Follow these simple steps for perfectly cooked coconut rice:

  1. Prepare the Liquid: In a medium-sized pot, combine the coconut milk, water, and salt. Place the pot over medium heat and bring the mixture to a gentle boil.
  2. Wash the Rice: While the liquid is heating, thoroughly wash your parboiled rice. Rinse it under cold running water two to three times, or until the water runs clear. This step is crucial for removing excess starch, which prevents the rice from becoming sticky and ensures fluffy grains.
  3. Cook the Rice: Once the coconut milk mixture is boiling, add the washed rice to the pot. Stir gently to combine. Reduce the heat to low, cover the pot tightly, and let the rice simmer. Allow it to cook undisturbed until all the liquid has been absorbed, which typically takes about 10-15 minutes. Resist the urge to lift the lid during this process, as it allows steam to escape, affecting the cooking process.
  4. Add Veggies & Fluff: Once the liquid is absorbed and the rice is tender, remove the pot from the heat. Stir in the chopped carrots and thawed peas. Using a fork, gently fluff the rice to separate the grains and evenly distribute the vegetables. This also helps release any remaining steam.
  5. Serve: Turn off the heat and let the rice rest for a few minutes with the lid on. Then, serve hot with your chosen main dish. Enjoy the delightful fragrance and taste of your homemade easy coconut rice!

Pro Tips for Perfectly Flavorful Coconut Rice Every Time

While this recipe is incredibly forgiving, a few expert tips can elevate your easy coconut rice from good to outstanding:

  • Rinse Your Rice Thoroughly: As mentioned, this step is vital. Rinsing removes surface starch, which is the culprit behind gummy, sticky rice. For parboiled rice, two rinses are usually sufficient; for jasmine or basmati, you might need more.
  • Use the Right Pot: A heavy-bottomed pot with a tight-fitting lid is ideal. This ensures even heat distribution and traps steam effectively, crucial for perfectly cooked rice.
  • Don’t Peek! Resist the temptation to lift the lid while the rice is simmering. Each time you lift it, precious steam escapes, extending the cooking time and potentially leading to unevenly cooked grains.
  • Let it Rest: After cooking, always let the rice rest off the heat, with the lid still on, for at least 5 minutes. This allows the steam to redistribute, resulting in fluffier, more tender rice.
  • Fluff with a Fork: Once rested, use a fork to gently fluff the rice. A spoon can mash the grains; a fork helps separate them beautifully.
  • Season to Taste: While the recipe provides a good baseline, always taste and adjust the salt to your preference after cooking.

  • Stews: Whether it’s a hearty African peanut stew, a savory beef stew, or a fragrant vegetarian stew, coconut rice provides a delightful contrast in texture and taste.
  • Grilled or Baked Seafood: The sweetness of the coconut rice is a natural match for flaky grilled fish (like salmon or snapper), succulent shrimp, or pan-seared scallops. I particularly love serving it with this peppered fish – oh, the flavors!

  • Vegetable Stir-fries: A medley of colorful stir-fried vegetables with a savory sauce tastes incredible alongside this rice.
  • Beans and Legumes: Simple black beans, red beans, or chickpeas simmered in a light sauce find a wonderful home next to creamy coconut rice.

Basically, any dish you would typically serve with plain boiled rice will be elevated by the addition of this flavorful coconut version. It’s an easy upgrade that makes every meal feel a little more special.

Frequently Asked Questions About Coconut Rice

Here are answers to some common questions about making and enjoying easy coconut rice:

Can I use light coconut milk?
You can, but the rice will be less creamy and have a milder coconut flavor. For the best results and a truly luxurious texture, full-fat coconut milk is highly recommended.
Can I make coconut rice in a rice cooker?
Absolutely! Simply combine the rice, coconut milk, water, and salt in your rice cooker and cook according to its instructions for white rice. Adjust the liquid amount if your specific rice cooker or rice type requires it.
How do I store leftover coconut rice?
Store any leftover coconut rice in an airtight container in the refrigerator for up to 3-4 days. You can reheat it gently in the microwave or on the stovetop with a splash of water or coconut milk to prevent drying out.
Can I add other spices or aromatics?
Yes! For an extra layer of flavor, consider adding a piece of ginger, a clove of garlic, a bay leaf, or a few kaffir lime leaves to the cooking liquid. Remove them before serving. A squeeze of fresh lime juice at the end can also brighten the flavors.
What if my rice is too mushy or too hard?
Mushy rice usually means too much liquid or cooked at too high a heat. Hard rice means not enough liquid or not cooked long enough. Adjust your liquid ratio and heat next time. Remember, different types of rice absorb liquid differently.

Ingredients

  • 2 cups parboiled rice (370g) *see Note 1
  • 2 cups coconut milk (480 ml)
  • 2 cups water (480 ml)
  • 1/2 teaspoon salt
  • 1/2 cup carrots – chopped
  • 1/2 cup peas (frozen peas – thawed and rinsed)

Instructions

  1. Combine water, coconut milk and salt in a pot on medium heat. Bring to a boil.
  2. Wash parboiled rice twice to get rid of starch. Add to boiling liquid. Cover and let it cook until the rice absorbs all of the liquid. This takes about 10 minutes.
  3. Add chopped carrots and peas then fluff rice with a fork.
  4. Turn off the heat and enjoy with any side of choice. I love having it with this peppered fish or with stew.

Notes

1. If you choose to use another kind of rice, be sure to adjust the liquid quantity to suit the kind of rice. For example, Basmati rice will require less liquid to cook as compared to parboiled rice.

2. You could skip the veggies if you like but I really love the element of freshness and the nutritional value veggies bring to a meal.

3. I know that some of you reading this blog do not have easy access to coconut milk. In that case, make your own coconut milk! Crack open a coconut, cut into about 1-inch pieces and put in a blender. Add water to the level of the coconut and blend. Then pass it through a fine mesh sieve to separate the milk from the chaff. Et viola, you have coconut milk!
