  • 1 cup vegetable oil or other neutral-tasting oil
  • 6 large Roma tomatoes or 8 medium Roma tomatoes (see Note 2 below)
  • 6 oz tomato paste (170g) or double the quantity of tomato sauce
  • 1 teaspoon curry powder (optional)

Instructions

Prepare the Seasoning Blend:

  1. Chop the peeled ginger root and place it into a blender. Rinse and roughly chop the basil, parsley, and celery, then add them to the blender along with the garlic cloves and one-third of the chopped onion. Add a minimal amount of water to aid blending, then process until a smooth, fragrant paste forms.

Prep The Chicken:

  1. If using a whole chicken, thoroughly rinse it and pat dry with paper towels. Cut the chicken into desired serving pieces and place them in a large pot.
  2. To the chicken, add the salt, 2 Maggi cubes (or 2 teaspoons of chicken bouillon powder), a quarter teaspoon of white pepper, and half of the prepared seasoning blend. Add enough water to just reach the level of the chicken. Mix well with a wooden spoon to ensure all ingredients are evenly distributed.

  4. Pour the blended tomato-onion mixture into the pot. Cook this down for about 10-20 minutes, stirring frequently to prevent sticking and burning. Continue cooking until the tomatoes significantly dehydrate, and you see mostly tomatoes and oil remaining in the pot, with the oil beginning to separate.
  5. Add the tomato paste to the pot. Cook, stirring continuously, until the tomato paste darkens slightly and completely dehydrates, leaving only the tomato solids and oil.
  6. Stir in the remaining half of the green seasoning blend. Cook for 2-3 minutes, stirring from time to time, to allow the vibrant flavors of the herbs and aromatics to bloom.
  7. Pour in the reserved chicken stock, the curry powder (if using), and the final Maggi cube (or 1 teaspoon of chicken bouillon powder). Add half to one cup of water, depending on your desired stew thickness. Stir everything to combine.
  8. Return the broiled chicken pieces to the pot. Stir gently to ensure the chicken is coated and submerged in the stew. Let everything simmer together for 5 minutes, allowing the chicken to fully absorb the rich flavors of the stew. Turn off the heat. Your delicious African Chicken Stew is now complete!
